"....Today there are also numerous other fillings to choose from. You will always see the traditional, but then also butter, eggplant, pistachio and speck, mozzarella and prosciutto, mushroom, squid ink, chocolate, etc. The other flavorings aren’t as consistently found so when you see some different ones go for it-you never know when it will show up again.
For example in Santa Flavia I had a sugar coated Arancina with dark chocolate. The rice was still saffron and when I opened it the hot dark chocolate just oozed all over the place. Made a huge mess. It was glorious. Haven’t seen it since."
"The open market of Ortigia, and Siracusa in itself shows another side to Sicily. Showing another side to herself is Sicily’s trademark. Just when you think you know her she changes the game, she’s a little complicated and she’ll keep you guessing but she never fails to impress. I don’t think Sicily is an island that can be captured in words, in art, or on film. You can’t capture wild, and while the history here is domination after domination and being stepped on by every surrounding nation- the traces left behind from each rule made her even more dynamic and harder to understand. So to understand Sicily, you must accept that you cannot understand Sicily. She is not to be understood she is to be appreciated. There is a reason this island is always referred to as a woman."
